Victoria’s Fine Northwest Cuisine on Hood Canal in Union is under new ownership. The new owners are Executive Chef, A. Blake Caldwell III and his wife Corinne. They stated that the restaurant is committed to offering the best of the Northwest by using only seasonal, organic, local, and regional ingredients.

Prior to purchasing Victoria’s, the couple was employed at the Seattle Hilton Hotel, where Chef Caldwell was Executive Chef at the Top of the Hilton restaurant and Corinne Caldwell was the General Manager.

Prior to their experience at the Hilton, he was the executive sous chef at Andaluca, which is located in the Mayflower Park Hotel in downtown Seattle, and she was the general manager of Victoria’s under previous ownership.
