A new Los Cabos restaurant is on its way to Silverdale — and will be located in the former Elsie’s restaurant on Silverdale Way. Los Cabos has five other locations, including in Poulsbo, Bremerton and Port Orchard, owned and operated by five members of the same family.

“We have a lot of business from Silverdale customers,” owner Roberto Soltero, who is the general manager for all the restaurants, said about the decision to expand to Silverdale. He believes the new location will not negatively impact the other Kitsap restaurants because of their growing customer base.

The building, which the family is leasing, has been undergoing major remodeling in the last six months. The family has operated the Kitsap restaurants for about eight years. Soltero said the Silverdale diner, which will seat 140 people and will include a small bar, will provide the same family atmosphere and cooking from scratch as the other locations.

The restaurant is slated to open the first week of April.
